Lately, I am on a hunt for a good ramen noodle soup …
Before my visit to Arnhem a couple of weeks ago, I found out there is a proper Japanese ramen noodle shop called Set For Wish in the city center. I was excited!
The shop front was modern. I could not have missed the signage that said ‘Japanese Noodle’ on the glass pane. Their menu was displayed right next to the door. Fantastic for the curious potential customers like me.
I walked in and was greeted by a simple splash of Japanese traditional interior. The one and only staff working on a Friday night was friendly and ushered me to a table. The restaurant was already half filled at 5pm.
I observed the menu again. I skipped all the “don” dishes which are essentially Japanese rice bowl dishes. There were side dishes such as gyoza (€4.60), yakitori (€2.95), marinated seaweed (€3.50) or Chikuwa fish cake (€2.95). You could order milky flavored Calpis drinks, hot matcha, cold matcha and traditional matcha ice-cream (€2.80).
It had to be noodle soup! The menu offers all its soup dishes with miso broth base which is made from fermented soybean paste. I could have it extra spicy with Naga Jolokia. The world’s hottest chili pepper! The main ingredients available were chicken, pork, beef, seafood or tofu. Choices for noodles were either yellow ramen noodle or white udon noodle (+€1.00).
I hesitated a little before ordering. Should I order the spicy VOLCANO or regular broth? The Asian in me screamed certainty that I could handle it. Supposedly, it is 400 times hotter than Tabasco sauce!! Too scared to ruin my food experience, I decided to order the regular Pork Miso Ramen (€8.95). I can not go wrong with that.
The ramen noodle was served shortly. It came with five slices of Japanese Chashu (barbecued pork or char-siu), some bamboo shoot, half of a hard boiled egg, a tiny handful of fresh spinach, sweet corn, dried seaweed, sprinkle of sesame and spring onion while the ramen noodle was hidden under. The bowl of soup was hearty and flavorful but a little lighter than I expected. The braised pork belly chashu meat was tender enough but not quite juicy. Noodle quality was curly, thick and slightly chewy. That’s how it should be! It was kind of like a fancier and heavier instant noodle. The ramen was great but certainly no handmade noodle. For the price, the portion was adequate. I am giving Set For Wish’s Pork Miso Ramen 3.5 out of 5 points!
If there is ever a next time, I would gladly try one of the “don” dishes.
